Emily's Stuffed Green Bell Peppers
In a skillet, saute 1 diced onion and 3 cloves minced garlic in olive oil. When onions and garlic are soft, add 1 pound ground beef, salt, pepper, a dash of ground cinnamon and 1 bay leaf. Cover and let the meat brown.
In the meantime, create cups out of green bell peppers, cutting off the top and scraping out the insides. Broil them for 3-5 min or until slightly charred and soft, but still firm enough to stand upright.
When beef is cooked, remove bay leaf and remove from heat. Mix in chopped dried fruit of choice (I used golden raisins and apricots) *Look for fruit dried without added sugar to keep it paleo* Leave meat and fruit mixture off to side.
Fill bell peppers with meat and fruit mixture. If you are willing to add some extra fat, here is the sauce. If not, they are delicious as is!
In a blender pulse 3/4c walnuts, salt, and pepper
Add 3/4c light sour cream and 3/4c heavy whipping cream
Combine in blender and top bell peppers with sauce
