Workout of the Day (WOD)
Classes will be varied if not random functional movements done at high intensity. The WODs are scaled and modified to each athlete's level and performed at the highest intensity that the individual can sustain with good form and proper technique. These workouts will design with progression and development in mind. The WOD will be designed by your Elite CrossFit coach.

Emily's Chicken Chili

Hey all, Emily here! Thought I'd share my Paleo meals with you for everyone to enjoy!! This week is chicken chili! (I don't have a pic...yet)
You will need:
1 jalapeno chile, halved lengthwise and de-seeded
1 onion of choice, peeled and halved
1 poblano pepper, halved lengthwise and de-seeded
4 cloves garlic, peeled
2 tablespoons olive oil
3 boneless, skinless chicken breasts (seasoned in salt, pepper, and cumin) cut into 1/2 inch cubes
1/4 cup chili powder
1 can black beans
1 can kidney beans
1 can crushed tomatoes
1 can tomato paste
1 3/4 cup low sodium chicken stock

1. preheat broiler with rack 3 in. from heat. Arrange jalapeno, onion, poblano, and garlic, cut side down, on baking sheet. let them char...about 5 min.
2. Chop peppers, garlic, and onion once removed
3. In a large heavy skillet, add oil and work in chicken cubes in batches, browning them 5-6min. on each side. Remove and set aside on plate
4. Reduce heat to medium and add onion and garlic. Cook until soft. Add chili powder and 2 tsp salt. Cook, stirring for 1 min. Add chicken and add can of crushed tomatoes and peppers. Cook, stirring up brown bits for 3-5min or until fully incorporated.
5. Stir in stock, simmer for 20 minutes. Add beans and tomato paste, simmer another 10 min.
6. Top with avocado slices!!
